Matcha Chickpea Cookies

So yummy, so healthy. And most important of all, super easy to make. These Matcha Chickpea Cookies are packed with protein, gluten free and sweetened with maple syrup.


I need of a healthy snack, or a delicious breakfast, these are ready in 30 minutes. They are quite filling, and will keep in the fridge for 5 days.



Ready to bake? Here is what you need:


  • One can of chickpeas, rinsed and drained

  • 130g Peanut Butter

  • 80g Maple Syrup

  • 6g Djoenne Matcha powder

  • 1/2 ts Baking Powder

  • 1/4 ts Baking Soda

  • 50g Dark Chocolate



This is how you do it:


  • Blend everything, except the chocolate, in a food processor until smooth

  • Stir in peaces of chocolate -you choose the size



With everything nicely blended, create ca 6 cookies on a bake tray. Bake on 175C 15-20 minutes. Important -the cookies will feel soft even after baking. Now let them cool until firm on an oven grate.
